There are several ways of building a smoking facility for cold smoking. Some uses a tall cabinet where they put the woodchip in the bottom and hang the fish or meat to smoke above. Others use a smokehouse with a fireplace in the middle, and the suspensions under the roof.
I have chosen to build a more traditional smoking facility built in a slope with the fireplace at the bottom, a canal for the smoke at 8 to 10 meters which ends in a case. I made the fireplace and the smoke case in bricks, which led to a lot of work...
The fireplace is about 60 x 60 cm base, and has a opening in front with a slot in front. The roof is made of concrete, and a sloping roof. In the back there is a opening to the canal, about 15 x 15 cm, where the smoke is escaping.

The next step is the smoke case, which has a base of about 90 x 90 cm, and a height of ca 1 meter. I used bricks, and the roof is made of wood. It is hinged behind, and sloping. Before I bricked the last layer, I put a couple of reinforcement bars 2 cm from the wall, one in front, and one back. These can be used to put sticks on where I can put a grid on, or hang the meat or fish on. As a hing, I used a rope, it works fine. I use a stick to hold the roof up when needed. In the back of the roof hood there is a vent for the smoke to get out.

At last I dig t a ditch between the fireplace and the case, and used u-formed blocks to make the channel, and moulded them together with some clay on the bottom. When the moulding was dry, I filled the ditch again.
